Backwards Works-For-Me Wednesday

Today is another Backwards edition of Works-For-Me Wednesday hosted by Rocks in my Dryer. That means I get to ask you all a question and wait for your responses!

My question for today is very simple - what's your best casserole, crockpot, or other one-dish recipe? I'm always looking for simple, healthy dinner ideas, so bring it on!

Thanks for your visit to my blog. I'd love to go to Trinity College Libray (It's on my list) We were on the Isle of Iona where they say the book of Kells was written. It would be amazing to see the library and the book!

This is one of my all-time favorite casseroles. I also like baked pasta dishes, which at our house is generally just regular pasta and sauce baked with cheese on top.

Here's an easy one that me and my roommates eat right up. It can easily be doubled (it serves 4):

Chicken Soup Casserole

1 can cream of chicken soup
1 can cream of celery soup
1 can chicken and rice soup
1 large can of chicken (or fresh cooked)
1 cup (or less) mayo
1 cup minute rice
1 T minced onion
4 oz (1 sleeve) Ritz or Townhouse crackers

Mix all but crackers and put into Pam-sprayed casserole dish. Top with crushed crackers (I like to crush them right in the sleeve!).
Bake at 350 for 30-35 minutes.

Obviously, cutting down on the mayo (which I usually do) makes it healthier. I also use low fat on the soups and mayo.

This is a slow cooker recipe for Autumn Pot Roast...it sounded weird to cook the sweet potatoes in with the roast but the taste was so good! You could slightly taste the cinnamon too and it is a wonderful fall dish.

Hello,
I love sharing recipes and also getting other people's recipes. I have a "recipes" label on the sidebar of my blog, and I have a wonderful and healthy Carrot Casserole recipe. It sounds boring, but it uses ground turkey meat as the main ingredient--anyway our family really enjoys it. If you get a moment check it out!!

Pizza pasta-cook pasta, drain and place back in pot, add can or jar of spaghetti sauce, pepperoni, mozzerella cheese and itailian seaoning and heat until all melty. Also good with other pizza toppings like mushrooms, banana peppers, etc.
On the healthier side- Recipezar has a good kielbasa, white bean and tomato recipe that we just tried this week that was very good.
