WFMW - Easy Meal Ideas


It's Wednesday again! Shannon, over at Rocks in my Dryer, is hosting her weekly Works For Me Wednesday, sharing helpful tips. This week has a theme - easy meal ideas. See her blog for more details!
In the Allen Family Circus tent, we often have great dinner ideas. We plan things out on Monday, and they sound great; well-balanced meals, salads, bread, even occasionally a dessert. But the reality is that we're lucky to even come close to our planned meals two or three nights during the week.
Here are a few of our favorite throw-it-on-the-table kind of meals:
Lasagna casserole: cook & drain pasta of your choice. Stir in purchased spaghetti sauce and cottage cheese; heat. Top with parmesan or mozzarella.
Chicken & Rice: Prepare desired amount of Minute Rice according to package directions. While it is heating, add 1 can chicken, 1 can cream-of-something soup, and any canned or frozen vegetables you have on hand. Top with cheese.
Breakfast: Scrambled eggs & biscuits from a can.

And I came to see your meal ideas - I just had a lightbulb moment. It's the cottage cheese that makes the difference :) Thanks for that - I am definitely going to add that.

You don't even need to pre-cook the lasagna. Just check Chef Emeril's recipe if you don't believe me. You just put your dried lasagna in the baking dish, add the rest of your ingredients, throw it in the oven and ... BAM, it's soft and ready to eat.
