Butterscotch Brownies

Happy Saturday, y'all! I noticed just recently that for someone born & raised in the north, I sure say and write "y'all" a lot. It's such a great word, so unformally all-encompassing.


This recipe is in my file as a direct result of my hubby's love of all things butterscotch. I had never heard of "butterscotch brownies" until we were married - in my limited view, "brownie" was synonymous with "chocolate." But then he requested these, and I found a recipe, and WOW! They're really yummy and good. Proof that not every dessert needs to be chock full of chocolate to be decadent and good.

Butterscotch Brownies

¼ cup butter-flavor shortening
1 cup packed light brown sugar
1 egg
1 tsp vanilla
¾ cup all-purpose flour
1 tsp baking powder
½ tsp salt
½ cup chopped pecans
1 cup butterscotch morsels (optional)

Preheat oven to 350o F. Melt shortening over low heat. Remove from heat; mix in brown sugar, egg, and vanilla. Stir in remaining ingredients. Spread in a greased 8x8 baking pan. Bake for 25 minutes at 350o F. Cut while warm.

Let me pick your brain a bit. Pancakes. They're a problem.

I love pancakes, and I love to make pancakes. I've tried different mixes, different recipes, different strategies, and had varying results. Some are fluffy, some are cakey, some are boring.


And none are as good as McDonald's hotcakes.

What's their secret??

How about using butterscotch AND chocolate chips? :-)
I've never had McDonald pancakes so not sure if they're as good as the ones I make using this recipe but my family LOVES them. They come out light and fluffy:

BUTTERMILK PANCAKES
2 c. flour
3 T. sugar
1 t. baking soda
1 t. salt
4 T. butter, melted (or oil)
2 eggs
2 c. buttermilk*
1/4 c. water (approximately) to thin the batter
Heat griddle or skillet while making batter. Sift flour, sugar, baking soda and salt into large bowl. In separate bowl mix melted butter (or oil), eggs and buttermilk together. Add to dry ingredients. If batter is too thick, thin with water as needed.
Ladle about 1/4 cup batter onto hot griddle that's had a little oil or butter added so they don't stick. Turn when underside is browned and bubbles appear on top. Cook until other side is browned. Serve hot with butter and maple syrup or fresh fruit and powdered sugar (which is our favorite way, especially in the summer).
*If you don't have buttermilk, you can substitute either 1-1/2 c. plain yogurt thinned with 1/2 c. water OR you can use 2 cups milk mixed with 4 teaspoons lemon juice or vinegar. I use the milk and vinegar trick frequently.

Looks like you got a good recipe for the pancakes too. I usually use bisquik, but I might have to try Kim's recipe.
